Penne with Kale and Sausages

Serves 4

3 tbsp. olive oil
4 cloves garlic, thickly sliced
1 tbsp. chopped red chile, or to taste
1 small bunch kale, stems removed, chopped
20 oz. tomato sauce
3 to 4 spicy Italian sausages, cooked, sliced
3/4 lb. penne noodles, cooked
3/4 cup grated parmesan plus more to serve
Olive oil and torn basil to serve
Salt and pepper


  1. In a large frying pan heat olive oil over medium heat
  2. Add garlic and chopped chilies and cook 30 seconds until fragrant
  3. Add torn kale and season well
  4. Cook, stirring occasionally until kale is wilted, approx. 3 minutes
  5. Add sausages and cook 1 minute
  6. Add the cooked pasta and tomato sauce and bring to a boil
  7. Add the 3/4 cup parmesan and mix
  8. Serve with torn basil and a generous amount of grated parmesan, and a glass of Clos Cabernet Sauvignon
