French Onion Soup

French Onion Soup with Clos Pinot Noir

Makes: 4

11 oz Beef broth
1 cup Water
4 slices French bread
4 slices Provolone
4 slices Harvati cheese; diced
3 tbsp Red cooking wine
1/2 cup Butter; softened
4 cups Yellow Onion; sliced
1 tsp Oregano
½ tsp Onion Powder
Olive oil
Salt and pepper to taste

In a large pot over medium heat, mix melted butter and olive oil. Add onions and stir as they sauté. Add broth, water, wine, oregano, onion powder, and salt and pepper to taste. Allow to simmer for half an hour. Ladle soup into oven-safe bowl, and add a slice of bread to each. Top with a slice of Provolone and one piece of diced Harvati. Top off with a sprinkle of Parmesan cheese. Place bowls on a cookie sheet and broil until cheese melts and browns slightly. Serve with a glass of Clos du Bois Pinot Noir.
